These savory sweet potato fries are an excellent way to take advantage of a healthy vegetable that is loaded with vitamin A, fiber and potassium. They have an additional benefit as well, they’re cheap & very tasty.
You’ll Need:
- 1 lb peeled sweet potatoes cut into 1/4″ match-sticks (1 lb AFTER they’re all cut up!)
- 2 T olive oil
- 1/2 tsp ground cumin
- 1/2 tsp oregano
- 1/2 tsp cilantro
- 1 tsp garlic salt
- 1 T. fresh chopped parsley or 1 tsp dried
- 1/8 tsp black pepper
Preheat oven to 425 degrees. In a small bowl combine cumin, oregano, cilantro, garlic salt, parsley, and pepper.
Wash, then peel the sweet potatoes.
Cut them into 1/4″ match-sticks. You’ll need about 1 pound of cut sweet potatoes for this recipe.
Place sweet potatoes in a medium size bowl or pile directly on baking sheet if you prefer & and drizzle with olive oil, carefully turn the sweet potato
until all of the pieces are evenly coated. If your family isn’t shy, dig in with your hands, it’s considerably easier
Sprinkle seasoning mix evenly over the top and mix well until all the pieces are evenly coated.
Once the sweet potato slices are well coated, arrange them in a single layer so that pieces are not touching each other. (this allows them to get crispy!)
Bake for 15 minutes, remove from oven, flip all the fries and then return pan to oven for an additional 15-20 minutes, the fries will be golden brown and a little crispy.
As you can see from the photo, these are a little browner- I like them Very crispy!!

If you want a completely mess free batch, put the raw sweet potato fries in a large gallon sz ziploc bag, add the olive oil, seal and palpate the bag to ensure all pieces are coated. Mix the seasonings all together in a small bowl then dump into the bag, seal the bag and palpate once again until all the pieces are completely coated.
