Succulent shrimp roasted in fresh slices of lemon drizzled with butter and delectably seasoned with garlic and herbs, makes an amazing appetizer, or serve it over a bed of piping hot fresh angel hair pasta for a quick scampi!
You’ll Need: 1 lb Raw Shrimp
1 Lemon
1 pkg Italian Dressing Mix (like Good Seasons)
1 stick butter
1 heaping tsp minced garlic
Preheat the oven to 375F
Melt the butter, mix in garlic and pour it into a 9×13 baking dish. Slice the lemon thinly and arrange in a single layer in the butter. Spread the fresh raw shrimp over the lemon slices in a single layer.
Sprinkle the packet of italian seasoning over the shrimp. Bake for 8-12 minutes or until shrimp are cooked throughout. Shrimp are translucent when raw and turn a bright pink/white when cooked through.
I use the following rule to check if shrimp are done: llLook at the shape the shrimp tail makes
L=shrimp are still rare
O=shrimp are overcooked
C=shrimp are perfectly cooked
