7 Layer Ramen Salad

This simple 7 layer ramen salad recipe offers a tasty idea that is wonderful for using up small amounts of leftover side veggies. Use a light mayo and omit the bacon to lower the calories!

Ingredients Needed:
1 package of ramen noodles, any flavor- (flavor pkt is not necessary- save it for another recipe)
2 cups of water
1/2 cup of green peas
1/2 cup of sweet corn
1/4 c. cooked bacon, chopped
1 hardboiled egg, chopped
3 T. chopped green pepper
Lettuce, shredded
2 T. Mayonnaise (or to your taste preference)

Cook ramen in boiling water until tender, remove from heat and carefully drain. Rinse in COLD Water, place on shredded lettuce. Layer peas, corn, green pepper and mayo. Layer crumbled bacon and chopped hardboiled egg.

Serves 2

  1. I have to say, this recipe looks really delicious. I see a lot of recipes that use Ramen, because I seem to have a very large stock of ramen that I don’t know what to do with. This, however, looks really tasty (well, except the green pepper, maybe I’d use red or yellow instead due to personal taste). I think everyone in my family would enjoy this except my youngest!
