Broccoli- Cauliflower Au gratin is a flavorful dish of gently steamed fresh broccoli, cauliflower, carrots and onions in a delectable cheese sauce with just a hint of bread crumbs. This hearty dish makes a wonderful main dish, or a great side to any grilled meat.

You’ll Need:
1/2 Head fresh cauliflower florets
1/2 Head fresh broccoli florets
1 large Red onion, sliced in rings
3 tsp olive oil, divided
1 carrot, peeled & coined
1 1/2 cups milk (low fat is great)
2 tbsp arrowroot powder
1/2 cup shredded Gouda cheese
1/2 cup shredded Havarti cheese
1 tbsp dry mustard
1/2 tsp ground black pepper
Sea salt, to taste, optional
2 tbsp whole-wheat or Panko bread crumbs

Preheat the oven to 350F
Wash and cut the broccoli and cauliflower into small florets. Place them in a steamer panand steam them in the microwave for 5 minutes. (repeat until all the broccoli & cauliflower have been steamed.) Pour them into a large bowl as they are cooked. (We use the orka steamer dish) If you’d prefer, you can fill a large pot with water, bring it to a boil and cook the cauliflower and broccoli until tender, drain well. We generally prefer to steam our veggies to retain as many nutrients as possible.

While the veggies are steaming, in a medium saucepan heat the oil over medium heat and then toss in the onion, sauteing for a couple minutes, until they are translucent. Add the carrot and milk, stirring constantly, cook for 4 minutes. In a small bowl mix a couple Tablespoons of water and arrowroot powder until it’s well combined and then add the mixture to the milk. Stir constantly over medium heat until thickened, add cheeses, dry mustard, salt and pepper, stirring constantly until cheeses are thoroughly blended.

Pour the cheese mixture over the steamed veggies, stir to coat evenly. Sprinkle lightly with Bread crumbs and bake for 15 to 18 minutes. Serve Immediately
