Ramen Eggstravaganza

Ramen Eggstravaganza combines the flavors of sausage, fresh tomato, sage, tarragon and eggs into a delicious hearty inexpensive dish that works for any time of day.

Ingredients

  • 1 pkg. ramen noodles, any flavor, Crushed (seasoning pkt is not needed, save for another recipe)
  • 8 oz. ground pork breakfast sausage
  • 4 large eggs
  • 1/8 cup milk
  • 1 med. tomato, diced
  • 3/4 tsp. ground sage
  • 1/2 teaspoon dried tarragon
  • 1/2 teaspoon black cracked pepper
  • 1 tsp. sea salt

Cook Ramen noodles as directed on package, omitting the seasoning. (Save for another recipe), Drain thoroughly.
Crumble and brown sausage in a skillet. While the meat is cooking, blend eggs and milk in a medium bowl, until incorporated. When sausage is no longer pink, sprinkle sage over sausage, stirring well and then add egg/milk mixture to skillet and continue to cook for two minutes, stirring frequently. Add tomato, tarragon, salt, pepper and ramen noodles. Continue cooking until eggs are firm.

Serve hot with toast, or fresh biscuits!

I have made similar things with ramen noodles, but I would use french cut green beans, mushrooms, what ever color peppers I had left over and any left over veggies that were in the fridge along with eggs to bind it together and you you get Ramen Surprise because it will be a little differnt every time you make it depending on what you had in your fridge.
