Ramen Eggstravaganza combines the flavors of sausage, fresh tomato, sage, tarragon and eggs into a delicious hearty inexpensive dish that works for any time of day.

Crumble and brown sausage in a skillet. While the meat is cooking, blend eggs and milk in a medium bowl, until incorporated. Add tomato, tarragon, salt, pepper and ramen noodles. Continue cooking until eggs are firm.
Serve hot with toast, or fresh biscuits!
I have made similar things with ramen noodles, but I would use french cut green beans, mushrooms, what ever color peppers I had left over and any left over veggies that were in the fridge along with eggs to bind it together and you you get Ramen Surprise because it will be a little differnt every time you make it depending on what you had in your fridge.
