An amazingly simple dish to toss together, heart- healthy Honey Dijon Salmon can be baked or grilled and tastes great served with roasted asparagus or steamed green beans.
Salmon is a wonderfully heart healthy food high in Omega 3, protein and other vitamins and can great deals on fresh fillets can often be found in the early spring.
2 TBS Dijon mustard
4 tsp honey
2 tsp chopped fresh parsley
1/4 cup Panko bread crumbs
1 lb salmon filets, cut into 4 pieces
Preheat the oven to 450°F.
Combine the mustard and honey in a small bowl. Place each of the salmon filets in an oven-proof dish and spoon equal amounts of the honey glaze over each piece of fish. Use the back of the spoon to spread the Dijon Honey mixture evenly to coat the filets.
Sprinkle liberally with Panko and freshly chopped parsley. If you don’t happen to have fresh parsley you can either used dried or skip it altogether.
Bake 15 minutes for each inch of thickness, or until the fish is flaky. Alternatively the fillets can be grilled as well.
Other Notes:
If you want to add even more kick add a tsp of crushed mustard seed.
