A simple 1 pan hot dish of ground seasoned meat, peppers, tomatoes, rice and fresh veggies in a hearty, healthy dish that the whole family will love…
This one is great for sharing at potluck gatherings, which is how I acquired this recipe to begin with! It’s delicious served with tortilla chips or as a casserole or one-skillet dinner
You’ll Need:
1 lb Ground Beef or Turkey
1 onion, finely diced
1 green bell pepper, finely diced
1 10oz can Rotel Tomatoes, undrained
1 1/2 c. water
1 c. uncooked rice
1 pkg taco seasoning
1/2 tsp salt
chopped lettuce
3 green onions, sliced thinly
1 tomato, diced
handful jalapeno pepper slices
black olive slices or halves
Shredded Cheddar Cheese
In a large skillet, heat a drizzle of olive oil, add peppers and onions and saute until translucent. Add the ground meat (beef or turkey, your choice!) and cook until meat is no longer pink. Add the undrained Rotel tomatoes, water, rice, taco seasoning and salt, stirring together until incorporated. Cover and simmer 16 minutes on low heat.
In the meantime prepare bowls – add lettuce, onion tomatoes, jalapenos, black olives, top with a hearty scoop of the fiesta mix and top with a dab of shredded cheddar cheese and a dollop of sour cream, if desired.
Uncover and top with shredded cheese.
The leftovers, if there are any! are excellent in tortilla wraps for a quick, on the go lunch.
