Looking for a Guilt-Free Summer treat? These delectable Blueberry Cheesecake popsicles are only 87 calories each- but they taste like a fresh slice of cheesecake topped with plump delicious blueberries!
These are so easy to make and freeze pretty quick, they’re ready in about 2 hours time. These delicious treats are what we like to refer to as caboose friendly- they don’t stick to your butt!
Yield: 6 medium popsicles
Combine washed blueberries and water in a blender or food processor and puree until smooth.
In a medium bowl or KitchenAid mixer combine cream cheese, milk, vanilla extract and powdered sugar until very smooth and creamy.
Using whatever popsicle molds you have (even dixie cups would work well) layer the blueberry puree and cream cheese mixture. Insert popsicle sticks, Once you insert your popsicle stick, swirl it gently to just a bit to create a cheesecake swirl. This is so that when you eat your popsicle the layers don’t break apart.
freeze for at least 2 hours. To eat, run warm water over the popsicle mold for a second or so and it will pop right off.
