This Country Herb Chicken and dumplings is a traditional southern dish of true comfort food! This simple dish is perfect for using up leftover turkey or chicken and is ready in less than 20 minutes.
1 pkg of Country Herb Chicken Seasoning Mix
1/4 c. Butter
1 Medium Onion, Chopped
1/4 c. Flour
3 c. chicken Broth
1 1/3 cups milk (divided)
3 c. diced Cooked Chicken
2 c. Assorted Frozen Veggies (any kind you want)
1 c. Homemade Bisquick-type mix
In a heavy saucepan over medium heat melt the butter, then add the onion and cook until it’s translucent. Add the flour, stirring until it forms a ball, then add broth, 1 cup of the milk and the seasoning packet, whisking well. Continue whisking over medium heat until the mixture is smooth and thick. Add the chicken and frozen veggies, stirring often until they are heated through.
In a small bowl combine the remaining 1/3 cup of milk and the quick mix, mixing well. Drop by spoonfuls on top of the bubbling chicken/vegetable mixture. Cook uncovered about 4-5 minutes. Cover, shut off from heat and let set 7 minutes without disturbing.
