Need a way to sneak some veggies into your diet without feeling like you’re depriving yourself? Try these simple, healthy choice carrot zucchini bars!

These simple bars are a fantastic way to get your daily dose of vegetables on the go. They make wonderful healthier choice breakfast bars for the kids, or snacks.

You’ll Need:
1½ cups all-purpose flour
1 tsp baking powder
¾ tsp ground ginger
1 tsp ground cinnamon
¼ tsp baking soda
1½ cups shredded carrot
1 packed cup shredded zucchini
¾ cup packed brown sugar
½ cup raisins
½ cup coconut oil
¼ cup honey
1 tsp vanilla
2 eggs, slightly beaten

Preheat oven to 350* F.carrot-zucchini-bars

In a large bowl combine flour, baking powder, ginger, cinnamon and baking soda.
In another large bowl stir together eggs, carrot, zucchini, brown sugar, raisins, coconut oil, honey and vanilla.
Add carrot mixture to flour mixture, stirring just until combined.
Spread batter in an ungreased 8.5″ x11.5″ inch baking pan.

Bake about 30 min or until a wooden toothpick comes out clean. Let them cool Completely. For added Omega 3’s add 1/2 cup walnuts and increase baking time by 3-5 minutes.

Optional Frosting:
4 oz Cream Cheese
2 cups powdered sugar
1 tsp vanilla
2 tsp milk

Whip all ingredients together until smooth, frost.
