This light, refreshing salad offers a great amount of flavor and is excellent on it’s own or as an accompaniment to grilled chicken.
If you enjoy bleu or feta cheese, a few crumbles on top really add zest to this already flavorful dish! It doesn’t really matter what kind of apple you choose to use in the recipe, We generally use granny smith because they’re crisp and don’t brown easily. Sometimes we peel the apple, sometimes we don’t- again, it’s just a matter of personal preference.
You’ll Need:
1 apple, washed and diced
1 stalk celery, sliced thinly
1 shallot, minced
Juice of 1 Lemon
1/2 cup pickled beets, drained and diced
1 tsp Sugar
3 Tbs Walnuts, Chopped (Optional)
3 Tbs Olive Oil
S&P
In a small bowl combine all except for the beets, tossing well to mix, then gently fold in the beets. Let stand 10 minutes before serving.
