Combine the flavors of bacon, fresh spinach and cheese over your favorite pasta for an affordable filling dish that is ready in under 15 minutes flat.
- 3 c. Fresh Spinach
- 2 c. Sharp Cheddar Cheese (shredded/grated)
- 1 c. milk
- 1/4 c. Parmesan Cheese
- 4 c. Rotini Pasta, Shells or Macaroni (whatever you have on hand!)
- 6 slices of bacon- cooked and chopped into pieces
I know some recipes that make a cheese sauce call for flour, personally, I Loathe the texture of flour based cheese sauces, so I’ve omitted it.
Bring a large pot of water to a boil, add pasta and cook (al dente). In the meantime, in a small saucepan combine cheddar cheese and milk over low heat, stirring continually. Once the cheese sauce is smooth, add parmesan cheese and continue stirring, add cooked chopped bacon.
When the pasta is done to your liking, add the fresh spinach to the top, cover. Let it cook about a minute and a half. Drain in a strainer, return to pan, pour hot cheese sauce over the top, stir well. Season with salt and pepper, serve.
