If you love the flavor of Guacamole, but not necessarily the price of avocados in your area, here is a delicious recipe that your family is sure to love. This (faux) guacamole is made with edamame!
You’ll Need:
2 cups shelled Edamame beans
2 Tbsp lime juice
3 garlic cloves, minced
1/4 cup red onion, diced
1/2 cup fresh cilantro
1/2 Fresh jalapeño pepper, minced (optional)
2 Tbsp green onions, minced
1/2 tsp salt (more to taste)
1/4 tsp freshly ground black pepper (more to taste if needed)
1 Tbsp olive oil
In a food processor (or blender) pulse the edamame until it reaches a paste like consistency, about 1 minute. (Be sure to scrape the sides down if needed!).
Add lime juice, garlic, red onion, cilantro, jalapeno, green onions, salt, pepper and olive oil to the food processor. Pulse to combine.
Season with Salt & Pepper to your taste preferences, Serve immediately.
