Sweet Tea is a southern household staple. During the sweltering summer months, sweet peaches are at their peak, making this lightly fruited sweet peach tea an instant hit with friends and family.
We’ve been trying various peach recipes due to the abundance of little peaches from our young peach tree and came up with this amazingly refreshing sweet tea variation.
4 large peaches
4 family size tea bags
½ cup fresh lemon juice
1 cup granulated sugar
Thoroughly wash two of the fresh peaches, slice them in half and remove the pits. Cut them into 1/2″ thick slices, lengthwise and place them on a plate that has been lined with wax paper or parchment paper. Place them in the freezer until solid, about 3 hours. They can be left overnight if you prefer.
In a Medium size pot, bring the 4 cups of water to a boil, add the teabags, cover, remove from heat and allow the tea to steep for a full 12 minutes. Remove the tea bags from the hot brewed tea and add the sugar, stirring constantly until it dissolves completely.
Peel the remaining two peaches and cut them into chunks into your blender. Add 1/2 c. of lemon juice and puree the two until smooth and no lumps remain. If you prefer you can strain this through a sieve to remove any pulp.
Dump the strained peach/lemon juice mixture into a 2.5 quart pitcher, add the sweetened brewed tea, and fill to the top with Ice Cold Water, stirring well to mix.
Garnish with Frozen Peach Slices and Fresh Mint.
