Create your own Blueberry Vanilla Coconut Cream popsicles! Summers in South Carolina can be sweltering hot and no one really feels like eating. These healthy choice popsicles make a great snack with a bit of a protein boost without the heaviness of Cream-based treats.
You’ll Need:
2 c. Fresh Blueberries
3/4 cup vanilla yogurt (we used greek)
3/4 cup Full Fat coconut milk
1/4 cup sugar (or 2 Tbs Honey)
1 teaspoon vanilla extract
Puree the blueberries in a food processor until smooth.
In a small bowl combine yogurt, coconut milk, sugar and extract and whip together until smooth. Mix HALF of the mixture with the blueberries. Fill the tips of the popsicles molds with the coconut yogurt mixture, then fill with the blueberry mixture, pouring SLOWING to create layers. Alternatively you can freeze the first layer for about 20 minutes, then add the blueberry layer.
Freeze until solid. To release from the molds, run under hot water for a few seconds and they’ll pop right out.
