Chipotle Apricot Chicken

Spicy Sweet heat combine in this easy barbequed Chipotle Apricot chicken. . .

You’ll Need:
4 chicken breast halves or 6-8 Chicken legs, etc
2 fresh apricots, thinly sliced
1/2 cup chicken broth
1/3 cup apricot preserves
2 tablespoons chopped chipotle pepper in adobo sauce
1/2 teaspoon salt

In a medium saucepan combine the apricots, broth, preserves, chipotle pepper and salt and bring it to a boil, reduce heat and simmer until it thickens. Use this to baste the chicken and grill, basting occasionally with additional sauce.

This one is really simple to make ahead of time, the sauce freezes very well if you’d like to make double or triple batches for later.
