Chicken alfredo has always been a favorite in our home so we thought it would be interesting to convert our favorite chicken alfredo recipe into a Quinoa recipe to add a boost of nutrition (mainly protein and potassium!).
Quinoa is relatively inexpensive and blends well with many other flavors; You can learn more about it here.
You’ll Need:
1 c. Quinoa
2 1/2 cups water
1/2 tsp salt
2 cups Alfredo Sauce (Any Kind)
1 c. Leftover Cooked chicken, Diced
1 c. Green Peas
In a medium saucepan combine water and salt over medium heat with a tight cover on. As soon as the water begins to boil, dump in the quinoa, cover. Reduce the heat to a simmer and cook 12 minutes without removing the lid. Shut off the heat and let it rest an additional 15 minutes, again, without removing the lid.
In the meantime, heat the Alfredo sauce (homemade or jarred, etc) in medium saucepan, add the leftover cooked chicken and peas. Continue until all ingredients are hot then pour the sauce over the hot, cooked quinoa. Stir well, serve with garlic bread and side salad, if desired.
Homemade Alfredo Sauce:
2 cups heavy cream
1/2 cup (1 stick) butter
1/2 to 3/4 cup grated Parmesan cheese
1 1/2 tsp minced fresh garlic
1/2 tsp fresh ground black pepper
Combine the cream and butter in a saucepan over medium heat, stirring constantly, but do not let it boil. As soon as tiny bubble begin to form on the edges of the pan whisk in the parmesan cheese and garlic powder and black pepper. Continue whisking about a minute for the alfredo sauce to thicken. Remove from heat.
