The holidays are a fantastic time of year to try new recipes to share with friends and family! Here’s one that offers the festive flavors of rich eggnog, cinnamon, and spice but offset just slightly with a sweet strawberry!
You’ll Need:
Fresh Strawberries
Whipped Cream
2 Eggs
1 1/2 tsp Vanilla
1/2 c. oil (or applesauce)
2 3/4 c. ABC muffin mix
2 tsp Rum Extract
1 c. Eggnog
Preheat oven to 400F
Combine eggs, vanilla, mix, rum, and eggnog, mixing just until combined.
Line mini muffin tin with paper liners, fill the muffin liners 3/4 full. Bake for 16 to 18 minutes, or until muffins are golden brown. Let them cool completely. Top with a dollop of whipped cream add a strawberry for the Santa hat and a dollop of whipped cream on the top for the “pompom”.
These muffin bites are perfect for parties and gatherings!
