While this isn’t a true bruschetta, this creative Italian casserole dish of chicken, tomatoes, basil and stuffing mimics the popular appetizer and makes a filling entree for the entire family.
Box of Stove Top Stuffing
1/2 c. water
1-2 Boneless skinless chicken breasts, cut into chunks
1 Can Diced Tomatoes, undrained
2 tsp Italian Seasoning
2 Cloves Minced Garlic
1/2 – 1 c. Mozarella Cheese
1 T. Chopped Fresh Basil (or 1 tsp dried basil)
Preheat oven to 400F
Mix Stuffing mix, water, undrained tomatoes and garlic until moistened. Spray the bottom of a 9×13 casserole dish with non-stick cooking spray and layer with chunks of raw chicken. Sprinkle lightly with mozarella cheese, top with stuffing mix.
Bake for 30 Minutes
This casserole can be made up to 24-48 hours ahead of time and refrigerated until ready to bake. Stove-top regularly goes on sale in November and is often on sale just after the Holidays. We managed to find it for just .25 per box at Walmart just a couple weeks ago.
