Raspberry Lemon Delight

Recently I’ve taken a renewed interest in fitness and was thrilled to discover a sugar-free recipe that truly satisfies even the most insatiable sweet tooth. This diabetic-friendly recipe offers the natural sweetness of raspberries mingled with zesty lemon in a creamy vanilla base.

¼ cup part-skim ricotta cheese
¼ cup raspberries, room temperature, washed & lightly mashed with a fork
1 teaspoon lemon juice
¼ teaspoon grated lemon peel
1 drop vanilla extract
4 drops of stevia to taste

Combine all ingredients, except the stevia, mixing lightly. Add stevia, one drop at a time until desired sweetness is achieved. (This is entirely dependent on your personal tastes, as well as the natural sweetness of the berries used).

Per serving: calories 104, protein 7 g, carbohydrates 7 g, fiber 2 g, fat 7 g, sodium 77 mg.
