Halibut is a very light, flaky fish that is easy to cook, although not always available at a decent price. This particular recipe works well with cod, haddock, catfish as well as halibut.

* 4 (6 ounce) halibut fillets (Fillets should be free of any skin, regardless of the type of fish used)* 1/2 cup Sour Cream
* 1/3 cup mayonnaise
* 1/3 cup Parmesan Cheese, grated
* 1 tablespoon lemon pepper seasoning
* 1/8 tsp ground Chipotle Pepper (I use McCormicks)
* 3/4 cup bread crumbs

Preheat the Heat oven to 425 degrees F. Mix all ingredients, except bread crumbs, spread liberally over the halibut fillets in 9×13 dish.

Sprinkle with bread crumbs and bake 20-25 minutes (or until golden brown and fish flakes with a fork). The chipotle pepper doesn’t make the fish spicy, but does really accentuate the flavors and should not be omitted!
