    Once again, strawberries are abundant this week and I found them for only .99 per pound- which is a steal. I paid more than that for them 7 years ago when I picked my own! Spinach is still in season as well, so fresh spinach is still affordable. This is a wonderfully light salad with loads of flavor.

    3 cups fresh baby spinach leaves, washed
    1 cup bite size romaine lettuce, washed
    1 egg
    1/2 cup vinegar
    1/2 cup sugar
    1/2 cup very finely chopped onion
    1 cup sliced strawberries

    You’ll need to make the dressing ahead of time so that it has time to chill! It tastes much better COLD.

    Beat the egg and vinegar together in a small saucepan over medium heat, stirring until it is simmering & bubbly, Add sugar and very finely chopped onion, reduce heat and simmer for 5 minutes.

    Remove from heat, Cool, chill

    To make salad:

    Mix spinach & romaine lettuce, divide between 2 plates, top with strawberry slices, add dressing to your taste preference. Serves 2 as a main meal or 4 as a side dish.
