2012 $50 Weekly Menu Plan Week #40 – This focus on this weeks menu plan is avoiding the flu that appears to making it’s rounds in full swing! We’ll be using items from the freezer, fridge and pantry this week to make room for the upcoming deals on baking and pantry supplies. Total spent this week $18.19
We purchased Milk, puff pastry, cottage cheese, lettuce, celery, broccoli, cucumbers, cream cheese, spinach, and feta cheese.

We’ve incorporated garlic, hot peppers and chipotle into the menu plan nearly every day. While some people may prefer conventional flu treatments, we’ve discovered that eating these items while the flu is going around seems to make a difference in keeping us from getting it. Since many of our friends have been experiencing flu symptoms, we’re not taking any chances!

Monday 1st:

* Breakfast:Toaster Strudels
*Lunch: Chipotle Egg Salad Wraps
*Dinner: Shrimp Fettuccine Alfredo (over Rosemary Pepper Pasta) , Texas Garlic Toast, Salad

Tuesday 2nd:

* Breakfast: Cottage Cheese with Spicy Chow Mix (This chow mix is a spicy pickled cabbage recipe that has awesome flavor! It’s also known as vegetable Chutney)
* Lunch: Fire Roasted Armadillo Eggs, Garden Salad
*Dinner: Seared Halibut, garlic green beans

Wednesday 3rd:
*Breakfast:Apple Fritters, coffee
*Lunch:Homemade Loaded Pizza
*Dinner: Grilled Pork, Garlic Potato Wedges, Steamed Broccoli, Homemade Applesauce

Thursday 4th:

*Breakfast: Toasted Apple Cider Bread, Scrambled Eggs
* Lunch: Chipotle Egg Salad Wraps
* Dinner:Chicken & Broccoli Stir Fry

Friday 5th:

*Breakfast: Raisin Bran or Peaches & Cream Oatmeal
*Lunch: Grilled Cheese, Tomato Soup
*Dinner: Spinach Stuffed Shells, Garlic Bread, salad

Saturday 6th:

*Breakfast:Blueberry Muffins
*Lunch:Leftover Stuffed Shells & garlic bread
*Dinner: Panfried Catfish Nuggets, Baked Potato, Sweet Peas

Sunday 7th:

*Breakfast: Pumpkin Waffles w/ Applesauce, drizzled in maple syrup
* Midday: Eggplant Gateau, Jasmine Rice

Various Snacks & Dessert Items:

* Muffins
* Cottage Cheese w/ berries or Chow Mix
* Hard Boiled Eggs
* Cinnamon Apple Cherry Cheeseball& Apple slices
* Hummus & Veggie Sticks
* Microwave Popcorn

Drinks included:

* Iced Tea (Sweet Tea)
* Coffee
* Lemonade
* Copycat Gatorade
* CopyCat Arizona Green Tea

A few things we’d like to share: In addition to fresh herbs, we are still harvesting fresh jalapenos, eggplant, figs, watermelon, sweet potatoes and bell peppers from our every-shrinking small garden. The majority of items in this weeks menu are from the pantry, fridge or freezer, such as the shrimp, which was purchased several weeks ago on sale. It’s very nearly crab season again and with any luck we’ll be added several pounds of fresh crabmeat to the freezer too!

We anticipate a few questions regarding the recipes- you might have noticed that we didn’t purchase Heavy cream this week for the alfredo sauce. Rather than spend the extra money on pricey cream, we’re substituting it. It’s handy to keep a substitution chart taped to the inside of one of your kitchen cupboards for quick, easy reference. It will save you hundreds of dollars over the course of a year by preventing excessive trips to the store which often result in impulse buys. A single bag of chips at $2 a bag once a week is over $100 a year!

For those just joining our weekly menu plans, please note that we raise our own chickens for fresh eggs and are currently collecting 8-15 eggs per day, as such they are frequently incorporated into our weekly menu plans.

You’ll notice that we didn’t list meat in this weeks grocery expense, that’s because meat isn’t currently on sale and the freezer is well stocked. Search for “Meat Restocking Week” for additional details.
