Buy a few pounds extra, caramelize them, let them cool, shape into patties (about the size of a hamburger) & place them individually between pieces of parchment (about 5) then into freezer bags. Use them for a boost of flavor in omelets, quiche, on burgers, grilled or roasted potatoes, tossed with pasta or mixed into mashed potatoes.
