A wonderfully warming winter meal to take the chill off, this hearty winter soup offer loads of flavor and is easy on the budget.

You’ll Need:

1/2 cup red or green lentils
1 cup chopped onion
1 stalk celery, chopped
2 cups shredded cabbage
1 (28 ounce) can whole peeled tomatoes, chopped
2 cups chicken broth
3 carrots, chopped
1 clove garlic, crushed
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon white sugar
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/4 teaspoon curry powder

Add the lentils to a medium size stockpot and cover with water (about twice the depth of the lentils). Bring the pot to a boil, reduced the heat and continue to simmer 15 minutes.

Remove from heat, drain and rinse the lentils. Pour them into a crockpot and add all remaining ingredients. Cook on low all day long, or cook on high for 4-5 hours, or until veggies are desired crispness.

This hearty soup is easily doubled and goes great with fresh hot cornbread or biscuits.
