Imagine chicken wrapped in bacon, smothered with caramelized onions and simmered in a chipotle sauce. Now, imagine it ready in 20 minutes flat.. Stop imagining, it’s here!
Here is a tip before you begin, do not make the mistake of using 3 chipotle chili’s in place of the adobo sauce, USE the sauce, or you’ll need to add a CUP of sour cream to the top in order to remember where your lips used to be.
You’ll Need:
1-2 pounds of chicken breast , cut into lg chunks
1/3 pound bacon, cubed into large pieces.
1 large white onion, sliced
1 tsp cumin
1 tsp garlic powder
3 tbsp of chipotle adobo sauce & 1 Chipotle Chili
1 c. Cold Chicken Stock
1 Tsp Olive Oil
Set the pressure cooker on the “browning” setting and add the olive oil and onions to the pot. Season the chicken lightly with salt and pepper and once the onions have caramelized, add the chicken pieces to the bottom of the pot and brown them on all sides, but do not cook throughout. We’re just adding some nice color and texture to the chicken. Select Cancel on the pressure cooker to stop the browning process.
Add the remaining ingredients.
Close the lid and secure it. Set the pot for 16 minutes and press Start.
Serve with Salad or mashed potatoes, hot rice or any other side dish that you prefer.
