A robust Italian chicken noodle soup lightly spiced with a touch of jalapeno and fire roasted tomatoes and complimented with chunks of Italian sausage.
This hearty soup can be thrown together in about 10 minutes time using your digital pressure cooker. However, if you don’t happen to have one of these time saving beauties, we’ve included slow cooker and stove top directions for you as well!
You’ll Need:
4 cups cooked, diced or shredded chicken
3-5 Italian Sausage, Mild or Spicy, cut into small chunks
1 Onion, diced
1 Cup Celery, diced
1 Jalapenos, finely Chopped
1 Cup Green Bell Pepper diced
1 tsp Oregano
1 can Fire Roasted Diced Tomatoes
1/2 Cup Heavy Cream or 1/2 cup milk & 1/4 cup Real Butter
3 cans Chicken Broth ( about 5 1/4 cups)
2 Cups Pasta Noodles (Rotini or Macaroni, etc)
Digital Pressure Cooker Directions:
Add a drizzle of olive oil to the bottom of the pot and turn on the Browning function by pressing start, saute the vegetables in the oil, until they are lightly brown, then add the sausage, browning it on all sides. Gently scrape the bottom of your pot with your (non-metal!) spatula to release the bits and pieces of browned sausage.
Add the remaining ingredients, give it a quick stir and set it for 5 minutes. When it’s done, release the pressure quickly to prevent the pasta from overcooking. Open the lid and season it with salt and pepper.

Note:
If you’re using RAW chicken in your recipe rather than leftover chicken, do not add the pasta right away and set the timer for 10 minutes. Release the pressure, add the noodles and set it for an additional 5 minutes.

Slow Cooker Directions:
Combine all ingredients except the pasta into the slow cooker. Set it on high for 2-3 hours or low for 4 hours, add the pasta, leave it on high for 30 minutes or so undisturbed to let the pasta cook.
Stove Top Directions:
Saute the veggies in a drizzle of olive oil, add the sausage and brown all sides. Add all remaining ingredients except the pasta and bring it a boil. Add the pasta, cook until the pasta is done. Reduce the heat to low and simmer an additional 10 minutes for the flavors to really meld together. Tastes even better the next day!
